Savòr is a traditional product from the Romagna countryside, made after the grape harvest. The freshly pressed grape must is boiled and then left to rest two or three times. After that, all the autumn fruits the farmer had gathered before the first frosts—such as apples, quinces, pears, plums, and dried fruit—are collected. Everything is then boiled together, resulting in an Italian mostarda, naturally rich in sugars, which was traditionally used throughout the winter to garnish biscuits, tarts, or simply spread on bread.
Grapes grow throughout Italy, but only here in Romagna and in Piedmont is this recipe made. In Piedmont, this preserve is known as Cugnà.
In Italy, there are four types of mostarda produced. The most famous and widely sold is the Cremonese style, made with mixed candied fruit and very spicy.
The Mantovana mostarda is made with apples (Renetta, Anurca varieties) and is also spicy.
The Bolognese mostarda variety includes quince, plums, oranges, and sugar, and is not spicy.
The Romagnola mostarda is made with quince, pears, plums, lemon, and to add a spicy kick, we include ginger.
Jams are made by processing all other fruits and/or vegetables with sugar.
Marmalades are made by processing citrus fruits and sugar.
For every 100 grams of finished product, we use approximately 160 grams of ingredients, consisting of around 120 grams of fruit and 40 to 45 grams of unrefined cane sugar.
In our sugar-free compotes, to produce 100 grams of finished product, we use 160 grams of ingredients, consisting of 120 grams of the main fruit and 40 grams of Golden Apple puree.
It is our truly original line of fruit compotes made with a single ingredient: just pure fruit! We created this range especially for those who need or want to avoid sugar. Here, there is ONLY ONE ingredient: fruit.
Absolutely not!
Luvirie created the sugar-free compote range back in 2009, long before this type of product was widely talked about. In the last 4 to 5 years, even large companies have started marketing “sugar-free” products, but beware: often “sugar-free” simply means free of sucrose, while other ingredients or fruits with a high sugar content, equal to or even higher than sugar, are used instead!
Examples include: grape must, grape sugar, grape juice, apple concentrate, fructose, aloe, maltitol, stevia and so on.
Juices are typically made from fruit concentrate (which is a liquid, very high in sugar, often used by bartenders to make cocktails) and water, so they do not contain any fruit pulp. Our smoothies are made with 70% real fruit and water (the three sugar-free flavours: Pomegranate, Blackcurrant, and Redcurrant) and with 5% sugar (the Apricot, Pear, and Peach flavours).
In our 200ml smoothies with 70% real fruit, you will find 140 grams of the described fruit: you can really notice this density from the fruit pulp that remains inside the bottle!
