We use natural sourdough starter—the same one we’ve been cultivating for years—and let the dough slowly rise for 24 hours.

We make six varieties, and honestly, they’re all rather good:

  • Mangiafuoco Mostarda: now, here’s where we get a bit opinionated. Most commercial mostardas use “mustard aroma” – essentially a chemistry set in a jar. We use actual habanero chillies. Yes, it’s fiery, but you can still taste the fruit. Brilliant with boiled meats and strong cheeses.
  • Red Onion with Modena Balsamic Vinegar: we use proper Modena Balsamic Vinegar PGI, 15% of it, with red onions. Works beautifully with cheese boards, cold meats, even grilled fish.

Our biscuits are made with proper ingredients: Type 1 flour from Romagna (we’re quite particular about this), butter, and raw cane sugar.

The filled ravioli biscuits are especially nice – little parcels with our preserves inside. We do three varieties:

  2. Caramelised Fig filling
  3. Cocoa & Amarena filling.

Then there are the “special” varieties: Salted Caramel & Hazelnut (sounds trendy but actually tastes good), Chocolate & Cervia Salt (using that precious artisan salt from Cervia), and Amarena & Pistachio (quite elegant this one).
